H&H recently product reviewed Epicentre's spice blends. They gushed that the spice blends were the most inspired BBQ blends. I was interested but doubtful on how good they were. H&H top favorite was True North by SouthWest ($7/tin). Runners up were Chicken Love and Moroccan Blend. By chance, I stumbled across True North at Vinzeno's and bought it. True North could be described as a woody/savoury maple sugar concoction with a kick of heat. It smells is as intoxicating as "saint cinabon" is when you are hungry at the mall, it tasted totally holy cow awesome on steak..just the right amount of savoury taste to the spice heat... easily 11/10.

And yes, Shabadu, the veggier ate steak...and was happy and content

I second the deliciousness of that spice.  Of course a properly cooked steak that cuts like butter helps.

Hmm..  tough call.  I think the meat itself was better prepared last night than at Maribel's, so that might be a factor.  But I think if I compared this spice to the Blue Cheese crust alone, the spice wins.  However, part of the blue cheese experience was the extra sauces that it went so well with.  If you include those, then the blue cheese steak wins.  I don't think the spice would work well with those other flavours.

In summary, I think we need to make the blue cheese again for comparison.

I would agree, some of Maribel sides to her blue steak would not work b/c the True North already has chipotle and paprika in it and the caramelized onions would be too similar to the maple flavour..so it would be a duplicating the flavours. I think the balsamic reduction would still work...add potato gratin/asparagus and finish with creme brulee or bourbon hmmm!
